Turkey Taco Skillet

This is an easy, tasty meal that is perfect for meal prep! The whole family will enjoy customizing it with their favorite toppings.

You can enjoy this Whole30 dish for breakfast, lunch, or dinner.

Makes 3-5 servings.

You need:

  • 1-1.5 lb ground turkey

  • 1.5 tsp chili powder

  • 1.5 tsp garlic powder

  • 1 tsp cumin

  • ¼ tsp paprika

  • 1 tsp salt

  • Pepper

  • 1 tbsp oil

  • 1 large sweet potato

  • 1 bell pepper

  • ½ onion

  • 2 zucchinis

  • Topping choices: salsa, hot sauce, guacamole, shredded cheese, sour cream, etc


Step by step:

  1. Brown the ground turkey in a large skillet. While it is cooking, chop the sweet potato and mix together the spices (chili, garlic powder, cumin, paprika, salt, pepper).

  2. When the turkey is finished cooking, add a spoonful of the spice mixture and stir. Then, remove it from the skillet. Add in ½ tbsp oil and sweet potato and cover.

  3. While the sweet potato is cooking, chop the bell pepper and onion. Slice the zucchinis.

  4. Stir the sweet potatoes and add a small amount of water if needed. Remove from the skillet when a fork can pierce through it easily.

  5. Add in the remaining oil, the onion, bell pepper, and zucchini. Cover.

  6. While you wait, do dishes or prep something else. Or just enjoy yourself for a few minutes.

  7. Stir the veggies. When they are cooked, add back in the beef and sweet potatoes. Add the rest of the spices and stir to coat. Let cook for another minute.

  8. Top with salsa, hot sauce, guacamole, cheese, sour cream, whatever your heart desires!
