Southwest Chicken Salad

This no heat, no cook lunch is perfect for summer meal prep.

You can switch up how you eat it each day- try it with crackers, tortilla chips, on toast, the possibilities are endless!

Makes 3-5 servings.

You need:

  • 12-16 oz cooked shredded chicken (I used rotisserie)

  • 1 red bell pepper, chopped

  • 1/4 red onion, chopped

  • 1/2 cup black beans, rinsed and drained

  • 1/2 cup corn (roasted would be so yummy!)

  • 8 oz plain greek yogurt

  • 1 tbsp mayo (optional)

  • 1 tbsp taco seasoning

  • 1 tbsp chopped cilantro

  • Juice of 1 lime

Step by step:

  1. Mix together all ingredients.

  2. Serve with crackers, tortilla chips, on toast or lettuce cups. Or eat plain!
