Southwest Chicken Salad
You need:
12-16 oz cooked shredded chicken (I used rotisserie)
1 red bell pepper, chopped
1/4 red onion, chopped
1/2 cup black beans, rinsed and drained
1/2 cup corn (roasted would be so yummy!)
8 oz plain greek yogurt
1 tbsp mayo (optional)
1 tbsp taco seasoning
1 tbsp chopped cilantro
Juice of 1 lime
Step by step:
Mix together all ingredients.
Serve with crackers, tortilla chips, on toast or lettuce cups. Or eat plain!
