Apple Cinnamon Baked Oatmeal
You need:
1/2 cup apple sauce
2 tbsp melted butter or coconut oil (I used butter flavored coconut oil)
1/4 cup honey
1 tsp vanilla extract
2 eggs
1 cup almond milk
1 tsp baking powder
1/2 tsp cinnamon
1 apple, cubed (any kind will work)
2 cups rolled oats
2 scoops collagen powder (optional)
Step by step:
Preheat the oven to 350. Grease your pan. You can use individual glass meal prep containers, or a baking pan.
Mix together all of the ingredients.
Add the batter to the baking pan or meal prep containers. Bake until set, about 15-20 minutes.
When cooled, add a drizzle of collagen icing (recipe below) on top if desired.
Collagen Icing
1/2 scoop collagen
2 tbsp powdered sugar
1-2 tbsp almond milk
Step by step:
Mix together the collagen and powdered sugar.
Add the almond milk in small amounts, stirring as you go. Add enough almond milk for desired consistency.
