Apple Cinnamon Baked Oatmeal

This meal prep friendly breakfast is the perfect way to celebrate the beginning of fall!

You can bake it right into your glass meal prep containers, or a large baking pan.

Makes 3-5 servings.

You need:

  • 1/2 cup apple sauce

  • 2 tbsp melted butter or coconut oil (I used butter flavored coconut oil)

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 cup almond milk

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1 apple, cubed (any kind will work)

  • 2 cups rolled oats

  • 2 scoops collagen powder (optional)

Step by step:

  1. Preheat the oven to 350. Grease your pan. You can use individual glass meal prep containers, or a baking pan.

  2. Mix together all of the ingredients.

  3. Add the batter to the baking pan or meal prep containers. Bake until set, about 15-20 minutes.

  4. When cooled, add a drizzle of collagen icing (recipe below) on top if desired.

Collagen Icing

  • 1/2 scoop collagen

  • 2 tbsp powdered sugar

  • 1-2 tbsp almond milk

Step by step:

  1. Mix together the collagen and powdered sugar.

  2. Add the almond milk in small amounts, stirring as you go. Add enough almond milk for desired consistency.
