Peanut Butter Banana Baked Oatmeal

Perfect for breakfast or a snack!

This baked oatmeal is great to prep in advance and have to grab while you’re on the go.

Makes 3-5 servings.

You need:

  • 2 bananas

  • 2 cups oats

  • 1 tsp baking powder

  • 1/4 cup peanut butter

  • 1 tsp vanilla extract

  • 2 eggs

  • 1/4 cup honey

  • 1 cup almond milk

  • 2 scoops collagen powder (optional)

Step by step:

  1. Preheat the oven to 350. Grease your meal prep containers or baking pan.

  2. Mash the bananas. Add the remaining ingredients and stir to combine.

  3. Add the batter to the baking pan or meal prep containers. Bake until set, about 20 minutes.

  4. When cooled, add a drizzle of peanut butter on top if desired.
