Shawarma Grilled Chicken and Veggies with Magic Garlic Sauce

This Whole30 meal is so yummy and so easy! Everything will come together in about 30 minutes.

Great for a weeknight dinner or meal prep. If you want more carbs, add some potatoes to the grilled veggies.

Makes 3-5 servings.

You need:

  • 1-1.5 lb boneless, skinless chicken thighs

  • 3 tbsp lemon juice, separated

  • 2 tbsp oil, separated

  • 3 cloves garlic

  • 2 tsp salt

  • 2 tsp cumin

  • 2 tsp paprika

  • 1 tsp garlic powder

  • ½ tsp turmeric

  • ¼ tsp cinnamon

  • ¼  tsp cayenne

  • 1.5-2 lb chopped veggies of choice (we used 1 head of cauliflower, 1 zucchini, 1/2 red onion, and a few carrots)

Magic Garlic Sauce

  • 2 tbsp mayo

  • 1 tbsp lemon juice

  • ½ tbsp non dairy milk

  • 1 garlic clove, minced

  • ¼ tsp garlic powder

  • Salt to taste

Step by step:

  1. Mix together the garlic, spices, 2 tbsp of the lemon juice, and 1 tbsp of the oil. Add a little more than half of the mixture to the chicken and stir to coat evenly.

  2. Add the remaining 1 tbsp oil and 1 tbsp lemon juice to the remaining spice mixture. Stir and add to your chopped veggies.

  3. Heat the grill to medium high heat. Add the veggies to a grill basket and stir occasionally. Cook until fork tender, about 15 minutes.

  4. Sear the chicken thighs for 3 minutes on each side, then turn down the heat and continue to cook until the internal temperature reaches 165 degrees, flipping often.

  5. Mix together the ingredients for the Magic Garlic Sauce.

  6. Serve by drizzling sauce over the chicken and veggies.
