Breakfast Taco Bake

You can make this is a meal prep to eat breakfast tacos all week- or make a large casserole to feed a crowd!

Top with cheese, salsa, avocado, or hot sauce.

Makes 3-5 servings.

You need:

  • 6-8 corn tortillas

  • 1/3 cup refried beans

  • 1/2 cup chopped bell pepper and onions (cooked or raw)

  • 4 slices cooked bacon, chopped

  • 8 eggs

  • 1/4 cup milk of choice

  • 4 tbsp salsa

Step by step:

  1. Preheat the oven to 350. Grease the baking container (individual glass meal prep containers or a large baking dish).

  2. Cut the tortillas in half. Spread the refried beans on the tortillas. Arrange on the bottom of the baking dish.

  3. Spread the bell pepper and onions and bacon evenly in the dish.

  4. Whisk the eggs with the milk and add into the dish.

  5. Add the salsa and mix into the eggs.

  6. Bake until the eggs are set, about 20 minutes.
