Pasta Salad

This pasta salad is great as a side or as a full meal!

The addition of chicken makes it protein packed and lighter than traditional.

You need:

  • 1 green bell pepper

  • 1/4 red onion

  • 1 pint cherry tomatoes

  • 1/2 cup whole black olives (or 1/4 cup sliced)

  • 4 oz mozzarella cheese balls

  • 4 servings of pasta

  • 12 oz chicken (I used rotisserie)

  • Dressing

    • 2 tbsp olive oil

    • 2 tbsp red wine vinegar

    • 1 tbsp lemon juice

    • 1 tbsp dijon mustard

    • 1 garlic clove, minced

    • 1 tsp Italian herbs

    • Salt and pepper to taste

Step by step:

  1. Cook the pasta according to package instructions.

  2. While it’s cooking, chop the bell pepper, red onion, olives and chicken. Slice the tomatoes and cheese.

  3. Make the dressing by combining all of the ingredients.

  4. When the pasta is done cooking, rinse it under cold water and drain. Combine all ingredients. Top with parmesan and basil if desired.
