Greek Bowls or Pitas

This meal is great for meal prep or a Meal Train to take a meal to a friend!

If you are short on time, you can go with store bought tzatziki sauce and skip the rice.

You need:

Chicken

  • 1.5 lb chicken thighs

  • 2 tbsp lemon juice

  • 2 tbsp red wine vinegar

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tsp salt

  • 1/4 tsp dill

  • 1/4 tsp oregano

Rice

  • 1.5 cup long grain white rice

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • 2 1/4 cup water

  • 2 tbsp lemon juice

  • 1/8 tsp turmeric

  • Salt and pepper

Tzatziki

  • 1 cup plain greek yogurt

  • 1/2 cucumber, shredded

  • 1 garlic clove, minced

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1/4 tsp dill

  • Salt and Pepper

1 1/2 cucumbers

1 pint cherry tomatoes

1/4 red onion

Pita bread

Feta cheese

Step by step:

  1. Mix together all of the ingredients for the chicken. Let marinade for at least 30 minutes, or up to overnight.

  2. Preheat the grill to medium high heat. Cook the chicken thighs for about 5 minutes each side, until they reach 165 degrees. Remove from grill and let rest.

  3. Heat the oil for the rice in a large pot on medium. Add the rice and toast for about 3 minutes, stirring often. Add in the garlic and cook for 1 more minute. Add the water and bring to a boil. Reduce to low and cook, covered, for 15 minutes.

  4. While the rice is cooking, make the tzatziki by combining all of the ingredients.

  5. When the rice is finished, add the lemon juice, turmeric, salt and pepper.

  6. Slice the remaining cucumber, tomatoes, and red onion and combine. Slice the chicken into strips.

  7. Serve with pita bread and tzatziki.
