Chicken Shawarma Bowls

These Chicken Shawarma bowls are the perfect meal for summer.

You can heat up the chicken, or eat it as a no heat meal.

You need:

  • 1/2 batch of Chicken Shawarma

  • 3/4 cup quinoa

  • 1 1/4 cup water

  • 1 cucumber

  • 1 pint cherry tomatoes

  • 1/2 red onion

  • 1/2 cup olives

  • 2 tbsp mint, chopped

  • 1 tbsp parsley, chopped

  • Optional toppings: hummus, feta

Dressing:

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp red wine vinegar

  • 1 tsp mustard

  • 1 garlic clove, minced

  • 1/2 tsp oregano

  • Salt and pepper

Step by step:

  1. Cook the chicken shawarma according to the recipe.

  2. Combine the water and quinoa into a pot and bring to a boil. Reduce heat to a simmer and cover for 15 minutes. Allow to cool.

  3. Chop the veggies and herbs.

  4. Combine the ingredients for the dressing.

  5. Add the cooled quinoa to the veggies. Add the dressing and stir to combine.

  6. Serve with the chicken shawarma and optional toppings of hummus and feta.
