Gluten Free Pumpkin Pancakes
You need:
1/2 cup pumpkin
2 eggs
1 tsp vanilla
2-3 tbsp sugar
2 tbsp oil
1 cup gluten free flour (I used Bob’s Red Mill)
1/2 tsp cinnamon
1/4-1/2 tsp pumpkin pie spice
2 tsp baking powder
2 scoops collagen powder (optional)
1 cup milk
Step by step:
Mix all ingredients together.
Heat a large pan on medium heat and grease lightly. Add about 1/4 cup scoop of batter to make one pancake. Let cook for about 3 minutes per side.
