Gluten Free Pumpkin Pancakes

These pancakes are fluffy and delicious, but healthy enough to make a hearty breakfast you can feel good about!

Top with maple syrup, butter, or almond butter.

Makes about 12-15 pancakes.

You need:

  • 1/2 cup pumpkin

  • 2 eggs

  • 1 tsp vanilla

  • 2-3 tbsp sugar

  • 2 tbsp oil

  • 1 cup gluten free flour (I used Bob’s Red Mill)

  • 1/2 tsp cinnamon

  • 1/4-1/2 tsp pumpkin pie spice

  • 2 tsp baking powder

  • 2 scoops collagen powder (optional)

  • 1 cup milk

Step by step:

  1. Mix all ingredients together.

  2. Heat a large pan on medium heat and grease lightly. Add about 1/4 cup scoop of batter to make one pancake. Let cook for about 3 minutes per side.
