Chipotle Chili

This Whole30 chili is the perfect dish for fall.

The sweet potatoes give it just the right amount of sweetness without any added sugar.

You need:

  • 1.5 lb ground meat

  • 1 onion, chopped

  • 3 cloves garlic

  • 1.5 tbsp chili powder

  • ½ tbsp garlic powder

  • 2 tsp cumin

  • 2 tsp chipotle powder

  • 1 tsp oregano

  • ½ tsp paprika

  • 2 cups carrots, cut into bite sized chunks

  • 2 bell peppers, cut into bite sized chunks

  • 1 sweet potato, cut into bite sized chunks

  • 2 16 oz. cans crushed tomatoes (fire-roasted works really well)

  • 2 cups broth

  • Salt and hot sauce to taste, desired toppings


Step by step

  1. Brown the ground meat in a large pot on medium heat. While it is browning, mix the dry spices together in a small bowl.

  2. When the meat has browned, add in about a tablespoon of the spice mixture and cook for 1 more minute. Then, remove the ground meat from the pan into a separate bowl.

  3. Add the chopped onion to the pot and cook until translucent. Add in the garlic and remaining spice mixture. Cook until fragrant, about 1 minute.

  4. Add in the veggies, crushed tomatoes, and broth. Cover and cook for about 20 minutes, or until veggies are almost fork tender. 

  5. Add in the cooked ground meat and cook for another 10 minutes.

  6. Top with cilantro, avocado, shredded cheese, or any other toppings you like!
