Harvest Chicken Sausage Sheet Pan

This easy, tasty sheet pan meal comes together in just about 30 minutes!

Try this Whole30 meal for the perfect fall inspired meal prep.

You need:

  • 1 lb Brussels Sprouts

  • 1 large sweet potato

  • ½ lb carrots

  • ½ red onion

  • 1 Granny Smith apple

  • 2 cloves garlic

  • 2 tbsp oil

  • 2 tbsp apple cider vinegar

  • 1 tsp salt

  • 1 tsp thyme

  • ½ tsp cinnamon

  • 2 12 oz packages chicken sausage


Step by step:

  1. Preheat your oven to 400 degrees. Prepare a sheet pan with foil, parchment paper, or oil.

  2. Chop the Brussels Sprouts, sweet potato, carrots, onion, and apple into bite sized pieces. Place the veggies on the sheet pan.

  3. Mix together the oil, vinegar, garlic, salt, thyme and cinnamon. Pour over the veggies and stir to coat well.

  4. Put in the oven for about 10 minutes. While you wait, slice the chicken sausages into 1 inch pieces.

  5. After 10 minutes, add the chicken sausage to the sheet pan and stir again.

  6. Cook until the sweet potato is fork tender, about 25 more minutes.
